ALT The cover page illustrates schematically the elaboration of a novel #protocol, readily applicable by the #peach canning industry in setting up qualitative tests to determine product shelf life as well as to assist on going breeding programs for the evaluation of new candidate non-melting cultivars destined for canning purposes. It encompasses the determination of eight textural properties of canned fruits with the employment of Stable Micro Systems and three different probes. Texture Profile Analysis (TPA) allow us with a single measurement to determine hardness, fracturability, consistency, cohesiveness, springiness, chewiness, while Kramer Shear test simulates a consumer single bite and provides information about bite characteristic, crispiness and firmness. Special thanks to Associate Prof. Athina Lazaridou (Aristotle University of Thessaloniki) for guidance and transfer of knowledge.
