Research is very interesting. During my PhD, I solved the challenge of making rice noodles as hard as wheat noodles using soy proteins. Now, I am working on making plant based protein bars less hard by manipulating the proteins.

In Europe, the salary of lecturers keep them top 20 % earners in that continent. I just wonder the justification to pay Nigerian lecturers peanuts but it is ok.
