Nigerian restaurateur, a local dish should taste like local dish. Don't alter local dishes to appeal to foreign palate. A foreigner who wants to eat local dish should eat authentic local dish. A Nigerian should not be in Nigeria and local dish is unpalatable. When we go abroad, we eat foreign food for the experience. Foreign restaurants do not alter the taste to suit your African taste bud. The same should apply in Nigeria. A spicy food should be spicy. A peppery food should be peppery. A well cooked food should be well cooked. I shouldn't be looking for the taste or spice or pepper in a local food. If you want to open an European restaurant, than call it that and leave 9ja food out of the menu.
