Kevin at Hopton’s sourced a lovely piece of Beef for us at the weekend.
A joint called Thor’s Hammer.
It’s Beef Shin on the Bone (apologies in advance to the vegetarians and vegans!) so needs long and slow cooking, and is often used for smoking.
For anyone who’d like to know more about the budget and small farms, the second half the @BBCr4today podcast with @bbcnickrobinson and @amolrajan is a great listen.
