It's a rather compelling subject I've been studying for a while. It's based mainly on the kind of energy expended ... Our traditional food is carb heavy because our primary occupations were energy heavy. Fishing, farming, walking long distances etc... As work has evolved into white collar, our ideology behind food has not fully evolved with it and that's the desparity you are noticing...
