signing a lease means betting a town works for 5 years. with a truck we find out in one saturday. been wrong about plenty of towns, sold half what we planned, packed up and just didnt go back. try doing that with a storefront
last hour of the last day is the weird one. cases half empty, heads already in the next town, and thats ALWAYS when somebody pulls in saying they just heard we were here. so we dig thru the back freezer. every single time.
flank primal printed 166 a hundredweight yesterday, cheapest thing on the whole animal. rib was 647 off that same report. skirt and flank both come off the cheap end and neither one gets priced cheap in a store anymore. the wholesale side never got that memo.

guys running a stand live out of a motel in your town for 8 or 9 days, thats the average. by day 2 they know which gas station has drinkable coffee, by day 3 which corner of the lot floods when it rains. nobody puts that part in the job description.
sold out by 1pm looks like a win on paper. what it actually means is people drove out to us with cash and went home with nothing, and a good chunk of them dont come back. empty truck at close is the goal. empty at lunch means i guessed the order wrong.
1/7 everybody thinks the hard part of selling beef off a truck is the beef. its not. its finding out if the town will even let you park. one swing this spring, 7 towns, 7 completely different answers on what we needed to open.
6/7 so we flipped it. now we start permits 5 to 6 weeks out on every town before anybody looks at a map or a truck schedule. towns that cant answer inside that window just dont make the route. not a judgement on the town, its a calendar.
packers were clearing about 180 a head on cattle a week ago. thursday it was 64. futures dropped 3 sessions straight and cash cattle still traded 222 live up north, didnt budge. feeders held the line and the squeeze landed on the middle of the chain for once.
503 towns last year and exactly one of em saw us twice. woodville texas, tractor supply lot in february and again in december. 10 months between. everywhere else we rolled in once, learned the whole town, then never used any of it again.
