Preheat oven to 400 degrees. Split the pumpkin and scrape out seeds and pulp from the center. Place pieces facedown on a parchment paper lined cookie sheet. Cook until it is fork-tender (about 35-45 minutes depending on size). Let cool and remove the pumpkin flesh from the skin. Add pumpkin chunks to a food processor and process until smooth. (If it looks too dry you can at a tablespoon or 2 of water. If its to watery you can strain with cheesecloth or fine mess strainer).

๐บ Washington has been brewing up something special for a long time!
In 1865, Ezra Meeker, aka the โHop King,โ started growing hops on his farm, eventually becoming one of the countryโs largest hop exporters. Today, Washington is home to more than 430 craft breweries, ranking #4 in the nation for the number of breweries in 2021. Spokane, Seattle, and Tacoma even landed in the top 10 U.S. cities for breweries per capita that same year! ๐พ๐ป
Hereโs to Washingtonโs brewing roots, local hops, and a craft beer scene worth raising a glass to. Cheers to National Beer Day!

We're celebrating National Dessert Day with a homemade Washington Apple Braid! Want to try it yourself? The recipe is below. ๐
Welcome to Weโll Try It Wednesday!
Ingredients:
3 cups flour
24 tablespoons butter (chilled + diced into cubes)
2 teaspoons salt
1 cup water (cold)
5 apples (we used Lucy Rose)
3 tablespoons brown sugar
2 tablespoons granulated sugar
2 teaspooons cinnamon
1/2 teaspoon nutmeg
1 teaspoon lime juice
1 teaspoon vanilla bean paste
Instructions:
For the apples:
Cut your apples into smaller cubes and add into a bowl with the brown suger, granulated sugar, cinnamon, nutmeg, lime juice, and vanilla bean paste. Mix and move the apples onto a pan lined with foil. Bake the apples for 20 minutes at 350 degrees and then let cool.
For the dough-
In the bowl of a mixer add in the flour, salt and butter, beat on low speed until unevenly crumbly. Continue to beat the mixture on low speed as you slowly add in the water. Mix until all the ingredients are well combined (about 2 minutes). Let the dough rest in the bowl for 5-10 minutes. Shape the dough into a rough square, wrap in plastic wrap, and refrigerate for 30 minutes. Place the chilled dough on a lightly floured surface and roll the dough into a rectangle until it is about 1/4 inch thick. Fold one third of the dough into the center, then the opposite third over the first creating a letter fold. Turn the dough 90 degrees and repeat the process 2 more times. Chill the dough for another 30 minutes before rolling out. Move the dough onto a lighly floured surface and roll the dough into about 1/4 inch thick rectangle. Cut about 1 inch thick strips from the right and left edges to about 1/3 of the way in. Add the apples in the middle part that is not cut and alternating sides fold the cut strips over the apples. Bake the apple braid at 350 degrees until the top is golden brown. Enjoy!
