Here are some key facts about it: > Kufri Jamunia is India's first purple-fleshed, biofortified table potato, released in 2024 by the ICAR-Central Potato Research Institute (CPRI) in Shimla.  > Because the pigment extends all the way through the flesh, the nutrients survive standard Indian kitchen preparation—like peeling, boiling, and frying—which strips away the benefits of purely purple-skinned varieties. > Nutritional Profile: It is packed with anthocyanins (32 mg/100g)—the same class of antioxidants found in blueberries and jamun—alongside vitamin C (52 mg/100g) and carotenoids (163 µg/100g).  > Yield & Growth: It is a medium-maturing crop (90–100 days) that yields a competitive 32 to 35 tonnes per hectare. This means farmers don't have to sacrifice harvest weight to grow a more nutritious crop.  > Appearance: The tubers are oblong with shallow eyes, featuring both dark purple skin and vibrant purple flesh.  > Cultivation & Storage: It is recommended for the Northern, Central, and Eastern plains of India. It boasts excellent ambient storability with a dormancy of 6 to 8 weeks, making it practical for regions without robust cold-storage infrastructure.  > Culinary Uses: Beyond everyday curries and fries, ICAR-CPRI notes it can be dried and milled into purple suji, dalia, and flour to make dishes like halwa, upma, idli, and dosa, as well as premium purple potato chips.  > Vulnerability: While laboratory tests show moderate resistance to late blight, the variety is susceptible to it in actual field conditions.
