🍋 Mediterranean Lemon Chicken Soup
Ingredients (Serves 4)
2 cups cooked chicken (shredded, rotisserie works great)
6 cups chicken broth
1/2 cup rice (or orzo)
3 large eggs
1/4 cup fresh lemon juice (about 2 lemons)
2 tbsp olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
2 tbsp fresh dill, chopped (or 1 tsp dried)
Salt & pepper to taste
Instructions
1. Sauté aromatics
Heat olive oil in a pot over medium heat
Add onion → cook 3–4 minutes until soft
Add garlic → cook 1 minute
2. Build the soup
Pour in chicken broth
Bring to a boil
Add rice (or orzo) → simmer 10–12 minutes until tender
3. Add chicken
Stir in shredded chicken
Simmer 3–5 minutes to heat through
4. Make it creamy (key step!)
In a bowl, whisk eggs + lemon juice
Slowly ladle in 1–2 cups hot broth while whisking (to temper eggs)
5. Finish the soup
Reduce heat to low (VERY important—no boiling!)
Slowly pour egg-lemon mixture into soup while stirring
6. Final touches
Add dill
Season with salt & pepper
Heat gently until slightly thickened (don’t boil or it may curdle)
Serve
Garnish with extra dill
Add a lemon wedge for brightness
Drizzle a little olive oil on top
Tips
Want it thicker? Add a bit more rice or less broth
Prefer extra tangy? Add more lemon juice at the end
Great for meal prep—just reheat gently (no boiling)
Flavor
Silky, lemony, herby, and cozy—like sunshine in a bowl

Why do some of the most successful people become less happy as they get older?
Psychologists sometimes call it the burden of high achievement. When you spend years being rewarded for success, status, recognition, and professional accomplishment, it is easy to build your identity around those things.
In this week's episode of Office Hours, I talk about how our strengths change with age and how to be happier as they do. Drawing on my book From Strength to Strength, I explain fluid and crystallized intelligence and contrast how Darwin and Bach responded to professional decline.

Fear of criticism is holding you back more than failure itself:
– Approaching a woman respectfully at a bar is not a career risk, that fear is an excuse
– If she's not interested and you exit politely, you're both fine
– The guy with the high-value partner either has rich parents or is willing to endure rejection
– In 100 years no one will remember your mistakes, your dumb investments, or your awkward moments
– Everyone you're afraid of judging you is too busy thinking about themselves
– Tell the men in your life you love them, tell the woman you're crazy about her — the "cool and unbothered" act cost you a good life
– Mortality is the unlock: knowing time is short makes it easier to start the business, make the bold move, say the real thing

Run this experiment tonight: pick three Division III schools that fit your son academically and put your numbers through their net price calculators. Families cross D3 off the moment they hear "no athletic scholarships," and I have stopped counting what that reflex costs people. Merit and academic aid at these schools routinely beats the quarter-scholarship he is chasing at the D1 level, and the baseball is better than you think. The word scholarship is not the money. The bottom line on the award letter is the money.
