My daughter gave me a @butcherbox gift certificate last Christmas and I finally cashed it in. This New York strip was the first sample—I wanted to make sure I knew what I was doing before serving guests. I followed some of the advice you all gave me: Using a cast iron skillet I seared it in beef tallow for 2 minutes per side, rendered the fatty edge, then finished in a 400° oven for 4 minutes. It was outstanding. I’ve still got ribeyes, more strip steaks, tenderloin, and several other cuts waiting. Awesome gift. 🥩
