Pizza Quesadillas
Ingredients:
- 2 large flour tortillas
- ⅔ cup shredded mozzarella cheese, divided
- 2 tablespoons pizza sauce
- 6 slices pepperoni, halved
- 1 teaspoon butter
- 2 fresh basil leaves, thinly sliced (optional)
Instructions:
1. Heat Pan and Butter Tortillas: Preheat a large non-stick skillet over medium-high heat. Lightly butter one side of each tortilla using about ½ teaspoon butter per tortilla. Place one tortilla butter-side down in the hot pan.
2. Add Pizza Fillings: Sprinkle ⅓ cup of mozzarella cheese over the tortilla in the pan. Add the pizza sauce, spreading it evenly but not all the way to the edges. Distribute the halved pepperoni pieces and sliced basil if using.
3. Complete the Assembly: Top with the remaining ⅓ cup of mozzarella cheese, then place the second tortilla on top with the butter-side facing up. Press down gently to help everything stick together.
4. Cook First Side: Cook for 2-3 minutes without moving the quesadilla. You'll know it's ready to flip when the cheese starts melting and the bottom tortilla is golden brown with crispy edges.
5. Flip and Finish Cooking: Carefully flip the quesadilla using a large spatula. Cook the second side for another 2-3 minutes until the tortilla is crisp and golden, and all the cheese is completely melted.
6. Slice and Serve: Transfer the quesadilla to a cutting board and immediately cut into 4-6 wedges using a sharp knife or pizza cutter. Serve hot while the cheese is still melty and the tortillas are crispy.

Dorito Taco Casserole
Ingredients:
- 2 lbs ground beef
- ½ yellow onion, diced
- 1 tablespoon minced garlic
- 1 packet taco seasoning
- 10 oz can Rotel tomatoes (undrained)
- 11 oz can Mexicorn, drained
- 2 cups shredded taco blend cheese
- 9.25 oz bag nacho cheese Doritos, crushed
- Sour cream
- Pico de gallo
Instructions:
1. Brown Beef and Onion: Preheat oven to 350°F. In a large skillet over medium-high heat, cook ground beef and diced onion until no pink remains in the meat, breaking it up as it cooks. Add minced garlic and cook for 30-45 seconds until fragrant, then drain any excess grease.
2. Season and Add Vegetables: Add taco seasoning to the beef and stir to coat. Add the undrained Rotel tomatoes and drained Mexicorn. Mix until everything is well combined and heated through.
3. Start Layering: In a 7x11 inch casserole dish, spread half of the meat mixture in an even layer on the bottom. Top with half of the shredded cheese, then add a layer of half the crushed Doritos.
4. Complete the Layers: Repeat the layering process one more time: remaining meat mixture, remaining cheese, and remaining crushed Doritos on top. This creates two complete layers.
5. Bake Until Melted: Bake at 350°F for 15-20 minutes until the cheese is completely melted and bubbly. The Doritos on top should maintain some texture.
6. Top and Serve: Remove from oven and let cool for 5 minutes. Top with dollops of sour cream and fresh pico de gallo if desired. Serve hot and enjoy.
