My fave summer cocktail is the mojito. A good mojito requires lots of fresh mint - use 8+ leaves minimum. Muddle them on a cutting board (instead of in the glass). Use at least 4 lime wedges, gently squeezed. Good rum. Use a tall glass filled with one third ice cubes. Refreshing!
