As we've worked our way through the course, we finish on the eighteenth right in front of the hotel, where the peat lands are. We finish our flight with Caol Ila 18 - the archetypal Islay dram. Smoky, peaty with a touch of fruit. A classic Islay whisky to finish on. Slàinte.
