The reception was so positive, they decided to open their own burger bar - Little Brewski - in the city centre, in what was formerly the Ferma site. The premise is just five exceptionally high-quality wagyu burgers, fries, and a handful of on-theme sides - and they’ve had a lot of fun with recipe development. The Brewski keeps it simple with onions, cheese and pickles, while The Bear involves caramelised onions and their signature Bear sauce. The Bourbon, Bacon & Blue comes with bacon jam and blue cheese sauce (as you might expect). The Ode to Cheval looks to legendary Chicago diner Au Cheval - some say the home of the best burger in the US - and lovingly recreates their famous bacon, dijonnaise, pickles, and egg stack. Finally, there’s the Bone Marrow, Truffle & Parmesan - a house favourite - which does exactly what it says on the tin.
