Actually a good question. Take it with a grain of salt as i didn't invent digital storage but..
My understanding is this is because data (files, photos etc) gets decompiled into a language that operating systems use (binary, its a base 2 language so basically on or off, 0 or 1) this data is referred to as "bits". With this comes the powers of 2 etc.
Every 8 BITS of data makes 1 "byte".
Storage is actually built to be used in bits foundationally iirc. They translate it to to be more human readable by making it a base-10 system. (Your classic decimal system)
8GB = 68,719,476,736 bits....
8GB is easier to understand.
TL;DR: Binary math and Physical Hardware designs are the reason why.
