While fasting beyond ~24 hrs, I like to check when I get into ketosis. In ketosis, the body switches to burning fat. The name comes because fatty acids convert to ketones which are then used by our cells for energy (including the brain). I use simple urine ketone strips for that. I have seen that I switch to ketosis somewhere around the 20 hour mark. That means my liver glycogen empties by then, and the body switches to fat-burning.
