Why do so many patients report tolerating bread, pasta, and pizza better in Italy and France than in North America or Australia?
Fascinating presentation by Prof. Detlef Schuppan suggest a possible explanation: wheat varieties used in France and Italy contain several-fold lower levels of allergenic proteins. #UEGWeek

Costco blade tenderizes its steaks. The label says so, and it's the reason a Costco steak comes with a cooking temperature printed on it.
Before the steak hits the case it goes through a machine that pushes rows of thin blades into the meat to cut the muscle fibers, so a Choice steak eats more tender than it would on its own. You can't see the cuts once it's done, except sometimes in the fat on a ribeye.
The catch is what rides in on the blades. E. coli lives on the outside of a cut of beef, which is why a rare steak is normally safe. The sear kills what's on the surface and the inside was never exposed. Push that surface into the middle with a blade and rare isn't safe anymore. That's why USDA says a mechanically tenderized steak gets cooked to 145F with a 3 minute rest, the same number as a pork chop, where a steak that wasn't tenderized carries no cooking instruction at all.
USDA figures about 11% of the beef sold in the US is mechanically tenderized, and since 2016 the words have to be on the label. Costco started printing them in 2012, after an E. coli outbreak in Canada was traced to its blade tenderized steaks. The ground beef isn't tenderized. If the package in your cart says blade tenderized or mechanically tenderized, cook it through.

A 30 percent vitamin C solution dissolved in DMSO cleared 86 percent of basal cell skin cancer lesions within eight weeks in a clinical trial. In a randomized study published in Biomedicine & Pharmacotherapy, researchers tested a topical mix of high-concentration ascorbic acid and dimethyl sulfoxide, a solvent that helps substances penetrate deeply into the skin.
Applied twice daily for eight weeks, the combination produced complete clearance in 13 of 15 lesions (86.7 percent) among patients with low-risk basal cell carcinoma. This rate exceeded that of the standard topical treatment imiquimod, which cleared 8 of 14 lesions (57.1 percent). The vitamin C–DMSO formulation also caused fewer side effects and avoided the lasting skin hypopigmentation sometimes seen with conventional topical therapies.
Because basal cell carcinoma is the most common form of skin cancer worldwide, these early results suggest a possible low-cost, non-invasive option. Larger trials are still required before the approach can be adopted as standard care.

Elon Musk just turned the Tesla Roadster into something straight out of science fiction. 🤯
Driving UPSIDE DOWN. Flipping mid-air. Landing perfectly on four wheels.
No wings. No rocket fuel.
Just some absolutely insane engineering.
This 3D breakdown of how it works is MIND-BLOWING. 🚀

The Roadster event is the latest example of why Elon can’t wait to bring $TSLA and $SPCX together.
Elon says the new Roadster is a mashup of the two tech teams.
The car’s goal is to break the laws of physics: 0-60 in one second, suck the road for high-G cornering, and 10 thrusters that cause the car to flip. It’s a ridiculous display of engineering.
