New paper from the Narbad group’s collaboration with Ghanaian colleagues on fermented foods, funded by @UKRI_News GCRF, describes functional properties of lactic acid bacteria and yeasts with potential for novel starter cultures🧫

🦠 We showed that Desulfovibrio piger — a gut bacterium linked to healthy and inflamed guts — carries “sleeping” viruses (prophages) that can wake up and release on their own. Phages may influence gut microbial balance in ways we don’t yet understand. journals.asm.org/doi/10.1128…
