Humans have consumed cultured milk for millennia. Western civilization’s preference for fresh milk is a modern anomaly, enabled largely by refrigeration.
Before that you would drink the warm fresh milk after milking, then set it on the counter in a warm room to culture. The cream becomes sour cream, the rest becomes clabber. Clabber was used as a sort of yogurt or in baking (clabber girl anyone?) while the cream on top was turned into butter, sour cream, creme fraiche, cheese etc.
The probiotic content of the cultured raw milk is massive, far beyond what we know of today and the likelihood of pathogentic bacteria to multiply in culturing milk is very low. This study is a good read on the subject - journals.plos.org/plosone/ar…
It's important to note -where raw milk cultures and ferments, pasteurized milk spoils and rots. One is alive and one is dead. One is full of billions of live microbes and one is full of billions of dead microbes.
At the end of the day though the best way to store milk pre-refrigeration was cheese making.
Yes, let's do that :) Grandparents have so much wisdom, love, and skills to give and so little time to give it on short, sporadic visits, though they are aware that time is being carved out of harried and impossible schedules for them. They cherish and are grateful for those, but ache for the next one. So many golden moments and memories come casually and naturally over the course of unhurried days: meal preparation; sitting down together to eat; play games; study Scripture in a rich and meaningful way; sharing chores, projects, special skills, homework and homeschool support, etc. Parents need breaks, relief, and shared resources to recharge, get rest, strengthen their marriages with alone time together, pursue their interests and careers, etc. Instead, they are hurried, overstressed, and trying to 'fit it all in' day after day until everyone is sick and depleted. This is the conventional lie we are all taught, and we all suffer through this separation. The most painful realization comes later, because grandparents grow old and die, and kids grow up too fast and those moments and memory-making opportunities are gone forever. Let's collectively reclaim the God-given design and reject the false idea that we have to 'do it all ourselves' to prove and achieve 'success and independence' in the modern, conventional model.
