Ingredients: For the dough: • 250g all-purpose flour • 150ml water • 2 tbsp vegetable oil • ½ tsp salt • Extra oil for resting For the filling: • 250g ground beef • 4 eggs • 4 spring onions, finely sliced • 1 small onion, finely chopped • 2 garlic cloves, minced • 1 tsp curry powder • ½ tsp ground cumin • ½ tsp ground coriander • Salt & black pepper • Vegetable oil for frying For the dipping sauce: • 3 tbsp kecap manis • 2 tbsp rice vinegar • Fresh chili, sliced • Cucumber, diced • Shallot, thinly sliced Instructions: Mix the flour, salt, water, and oil until a dough forms. Knead until smooth and elastic, then coat lightly with oil and allow it to rest until relaxed and easy to stretch. Cook the ground beef with the onion, garlic, curry powder, cumin, coriander, salt, and black pepper until browned and aromatic. Let the meat cool slightly. Combine the cooked beef with the eggs and sliced spring onions. Stretch the rested dough extremely thin until almost translucent. Place the dough in a large hot, oiled pan and immediately spoon the beef-and-egg mixture into the center. Fold the four sides over the filling to create a tightly sealed square parcel. Fry until the underside is deeply golden and crispy. Carefully flip and continue cooking until the other side is equally crisp and the egg filling is fully cooked. Mix the kecap manis with rice vinegar, chili, cucumber, and shallot for the dipping sauce. Cut the hot Martabak Telur into squares and serve immediately with the sweet, tangy, spicy sauce. This twist on Filipino turon combines the classic crispy banana roll with a chilled cheesecake filling and a glossy caramelized sugar crust. Ingredients: • 8 lumpia or spring roll wrappers • 4 small firm bananas or 2 ripe plantains • 200g cream cheese • 35g powdered sugar • 1 tsp vanilla extract • 1 tsp cornstarch • 80g brown sugar • 60g superfine white sugar • Vegetable oil for frying • 1 tbsp flour mixed with a little water, for sealing Instructions: Mix the cream cheese, powdered sugar, vanilla, and cornstarch until thick and completely smooth. Shape the cheesecake mixture into 8 small cylinders on parchment paper. Freeze for about 40 minutes until very firm but not completely frozen. Slice the bananas lengthwise to create 8 pieces. Lightly coat each banana piece in brown sugar. Place a lumpia wrapper in a diamond shape and position one banana piece near the bottom. Place one chilled cheesecake cylinder alongside the banana.
