A generation ago, a restaurant's reputation traveled by word of mouth or a critic's column. Today it travels through a number. And that number is quietly running the restaurant industry. 🧵
10/ Turnover follows. Few people stick around in a job where one stranger's rating can define their week.
We lost our lovely Lady in Red, Valarie Graham. Our prayers go out to her family and friends. She was a bright light, super smart, and a great human. No one could rock a red suit better! You will be missed. 💔
Service-charge and broad tip-pooling models mean your top server on a Saturday night, the one who used to walk with $400 in tips, now splits a smaller, wage-suppressed pool with cooks, bussers, and dish. Equity in theory. A pay cut in practice for your best people.
"Servers don't need tips as much anymore" is the argument. Customers in no-tip-credit states apparently agree — and tip less. The wage increase didn't add income. It reallocated where the money was coming from, and shorted the worker in the process.

So here is the deal everyone: The SEIU crafts mandated wage hikes under the guise of "lifting 100,000 workers out of poverty." It gets passed by SEIU supported, endorsed, paid for politicians on the @SeattleCouncil and the Mayor. The mandated wage is put on a growth scale, so it will never stagnate. Employers like Erickson then have to navigate the wage hikes and turn to non-transparent pay models like "service charges." Navigations like these actually eat into the income of tipped workers who are then disgruntled and form a union. BECAUSE MADATED WAGE HIKES WERE NEVER ABOUT HELPING WORKERS. This was always about squeezing workers into unionization. These workers were either salted or fell for it, but in the end the "plan" worked out perfectly and the SEIU won. @JimWalshLD19

If you need an example of how the mainstream Seattle media is in collusion with the SEIU and Working Washington, here is a receipt.
In 2016 King 5 lead the evening news with a piece about the FSWA pushing back on Working Washingon/SEIU and the restrictive scheduling policy they were pushing through the city council.
The next morning, King 5 editor, Russ Walker, pulled the piece and put up a redaction with a picture of Ed Murray. Minutes later, Russ tweeted at Working Washington:
