The culinary world can do a lot more to encourage people to make plant based foods their default. Apps like @CookWithKuri and efforts like @defaultveg are showing that we can nudge eaters toward healthy plant based meals without taking away choice. @epicurious can do more.
When @epicurious pledged to cut out beef in 2021, I called it the “most meaningful climate commitment I’ve seen from a business.”
But climate promises only matter if they get fulfilled. So 2 yrs later, @ariellesamuel and I decided to check up on it.
