Our family tradition is to wake the kids on the 4th of July and watch the early time zone fireworks in Sydney, Tokyo, Hong Kong, etc. They weren’t on TV this year. What’s up with that?

Tri Tip dry brined overnight, seasoned with @HeathRilesBBQ Garlic Jalapeno Rub plus black pepper and sous vide @ 131 degrees for 7 hours, then hit the Weber Genesis armed w Grill Grates (flat side) for a crust. Terrific served w Maldon salt and horseradish cream sauce.
Turkey and Black Bean Chili, pretty and all mixed up. Great recipe for the Instant Pot from @DadCooksDinner that I’ve made many times over the years.
New Year’s Eve dinner. Rib roast cooked on the Weber Searwood with a sprinkle of Maldon salt, chimichurri sauce, and horseradish sauce. Had some salad too.
Rack of St. Louis and rack of baby backs on the Weber Searwood 600. Chugged all afternoon at 225 and used maybe $5 of pellets. I’ll go 250 next time to speed it up. Ribs tasted great.
Zero to 400 wings were the first cook on the new Weber Searwood. Came out great, and the Kinder’s seasoning had a good flavor. All of the Kinder’s products that I’ve tried have been high quality.

Been making sourdough loaves that take overnight in the fridge but didn’t plan ahead. This King Arthur Flour Basic No Knead recipe with regular yeast can be done in a day if you start early. Tasted good.

Made some bread today for the first time in a while. Went great w Donald Link’s recipe for chicken sauce piquant. Kerrygold butter on it was also nice.
Thomas Keller recipe roast chicken, with sliced sweet potatoes, russets, and onions cooked in the drippings in the broiler pan below. Whole Foods air chilled chickens are worth it for this.
