Vitamin D toxicity does not exist in the sun. It exists in the bottle, and it puts people in hospital with calcium in their blood, kidney stones, vomiting, confusion and, in the worst cases, calcium laid down in the kidneys for good.
Your skin will not make more than it needs. Stay out all afternoon and the surplus is broken down into compounds that do nothing. There is a governor on the tap, and it has been there for two hundred thousand years.
The capsule goes in past the governor, in one dose, at a number a committee guessed at.
And the vitamin was never the point of going outside. The same light pulls nitric oxide out of your skin and drops your blood pressure. It releases beta-endorphin in the same tissue. Through the eye, it sets the clock that decides when you sleep and when you wake.

Everything bad is good and everything good is bad.
Butter is the single most useful object in a kitchen and half the country is still frightened of it.
The excuse is always the same. Dairy does not agree with me.
Goat butter, then. White as chalk, milder than you expect, and none of the A1 protein most people are actually reacting to. No good? Sheep butter. Still no? Ghee, which is butter with the milk solids cooked out, leaving nothing behind to argue with. Still no? Cultured butter, where the bacteria have already eaten the lactose on your behalf.
Four doors. One of them opens. If none of them do, you do not have a dairy problem, you have a position.
The rest of the fear is inherited. A generation was talked out of the best fat in Europe by a committee, and talked into margarine: refined seed oil, hardened in a factory, deodorised because it stank, dyed yellow because grey does not sell, and marketed with a picture of a heart on the lid. The hardening process was pulled from the food supply four decades later, quietly, once the arguments got embarrassing. Nobody sent a letter.
Butter has never been withdrawn from anything. Butter has no lobby, no advert, no health claim on the wrapper, and two ingredients.
So put it everywhere.
In the pan before the eggs. Through the mince after it browns. In a slab on the steak while it rests. Stirred into the pan juices until there are no pan juices left, only sauce. On cold roast beef at eleven at night. In the coffee. Off a spoon in a dark kitchen, which is normal and I will not be discussing it further.
Then the heat comes. Enough butter and a chop and you start running like a small furnace, warm at rest, out in a jumper in November while everyone else has the heating on and a blanket.
Butter has lowered your gas bill. Butter has killed the four o'clock snack, so butter has fixed your willpower. Butter has ended a fifteen year war over what the children will eat. Butter has improved your marriage, because nobody is hungry at six. Butter has resolved the dispute with next door, because a man radiating quiet warmth does not care about a hedge.
Buy the good stuff. Buy far more of it than feels reasonable. Put the dish back in the middle of the table where it lived for four hundred years, and let anyone who has a problem with it explain themselves.
Climate is a fake business model ...
There is now a serious, well-funded plan to vaccinate every cow on earth, twice a year, so it burps less politely. Bill Gates is behind it. So is the New Zealand government. Somewhere a marketing department is very proud.
The company furthest along calls its methane vaccine the holy grail of livestock emissions, a phrase that should make you reach for your wallet and check it is still there.
The pitch is gloriously simple. Train the cow's own immune system to turn on the microbes in her gut, so she belches less methane, with a single jab lasting months. Early results suggest a cut of ten to fifteen per cent. Trials run through 2027, launch around 2030, by which point the dream is a needle in the neck of every cow they can corner.
Pause on that. Not a feed tweak. A plan to medicate an entire species, forever, across the whole planet, to fix a problem with how we count its burps.
Because methane from a steady herd cycles out of the air within about a decade. It does not pile up like fossil carbon. A stable national herd adds no new warming whatsoever, whatever the headlines shriek. The cow was convicted by an accounting method, and the sentence is a lifetime of injections.
And follow the money, because it does the confessing for you. The cash floods in from billionaire climate funds and the food giants chasing their own supply-chain targets, the very people who need the cow to look guilty so their spreadsheets come out green. Not a penny from the farmer, who just inherits the syringe and the bill.
So the grass-fed cow, quietly turning rain and sunshine into food on land that grows nothing else, is now a wellness patient with a biannual appointment. Marvellous. The cow was never the emergency. The people insisting she is just happen to have a vaccine to sell.

Give the finest engineers alive a cow, a blank cheque, and one instruction: build a second one from scratch, the entire working machine, organs and microbes and all.
They will fail.
They can map every cell and still not reproduce the rumen: a warm fermentation reactor running on wild microbes nobody has to sterilise, that seeds itself, repairs itself, and digests the one material on the planet we cannot, turning a thornbush into a fillet.
They cannot match the power supply, which is rain. Or the fuel, which is grass nothing else will eat. Or the production line, which is the animal quietly building the next animal at no cost and asking no one's permission.
It improves the soil it stands on. It carries no patent, no firmware, no subscription. It has been in continuous production since before writing existed and has never once needed an update.
We keep calling it old, which is a peculiar insult to aim at the only food machine that has shipped a billion units and never lost in its category. The nearest competitor is a steel vat of slurry that drinks electricity and reports to a man with a clipboard.
Lightyears ahead, still, and grazing.
