Steakhouse dinner, about 4g net carbs, 30 min 👇 Seared sirloin with blue cheese butter and roasted broccoli 🥩 A Sunday-night steak dinner without the restaurant bill. Ingredients (1 serving): • 1 sirloin steak (about 8 oz / 225 g), 1 inch thick • 1½ cups broccoli florets • 1 tbsp olive oil, divided • 1 tbsp soft butter • 1 tbsp crumbled blue cheese, plus a little extra • 1 tsp chopped chives • Salt, cracked black pepper and flaky salt Method: 1. Heat the oven to 425°F (220°C). Toss the broccoli with half the oil and a pinch of salt, spread it out on a sheet pan, and roast 18–20 minutes until the edges char. 2. Mash the butter with the blue cheese and chives. Chill it while the steak cooks. 3. Pat the steak dry and season well with salt and pepper. Sear in the rest of the oil in a very hot skillet, 3–4 minutes per side for medium-rare. 4. Rest the steak 5 minutes, then slice against the grain. 5. Plate the steak with the broccoli, top with the blue cheese butter so it melts into the slices, and finish with flaky salt and a few extra crumbles. Tip: a rimmed sheet pan with plenty of space lets the broccoli roast instead of steam, so the florets get those crispy, nutty edges. 🔖 Bookmark this for your next steak night. #keto #lowcarb

Flying roadsters are coming. Good. Happiness needs a far horizon: picture the future, then build it. But to build it, we need bodies and minds that work. That means staying grounded in 2 million years of biology. Engineering fails when it treats health as a machine. Health isn't complicated, it's complex: tweak one part and the outcome is unpredictable. Eyes on the stars. Feet in the steak. 🥩🚀

Fibre feeds your gut bacteria, and they say thank you loudly. A ribeye has never cleared a room. xitter.cf/sbakermd/status/211181…
The 2021 study published in the journal Nutrients (Barber et al., “Differential Effects of Western and Mediterranean-Type Diets on Gut Microbiota: A Metagenomics and Metabolomics Approach”). It was a randomized crossover trial with about 18–20 healthy men (ages 18–38). Participants spent two weeks on a fiber-enriched Mediterranean-style diet (mostly plant foods like vegetables, fruits, legumes, and limited animal products such as fish) and two weeks on a higher-fat Western-style diet (more meat, eggs, dairy, and less fiber), with a washout period in between. Key findings reported in coverage (including New Scientist): • On the plant-rich diet, the men logged about seven times more flatulence episodes per day (using a handheld counter). • Each event contained roughly 50% more gas (measured with rectal balloons after a bean test meal). • Stool volume roughly doubled (~200 g/day vs. ~100 g/day), though the number of bowel movements stayed similar. • This was linked to more fiber-fermenting gut bacteria producing gas (mostly odorless hydrogen, methane, and CO₂) plus short-chain fatty acids. Media headlines often framed it as “vegan men fart 7 times more than non-vegans/normal men,” but the plant diet was Mediterranean-style (not strictly vegan) and compared against a Western diet in the same men, not lifelong vegans vs. omnivores. The study’s abstract notes higher numbers of anal gas evacuations, more flatulence sensations, larger post-meal gas volume, and larger colonic content on the Mediterranean diet, with substantial shifts in microbial metabolism despite smaller changes in overall microbiota composition. Researchers and commentators (e.g., Rosemary Stanton) generally described the extra gas as a sign of healthy fiber fermentation and colon function rather than a problem. These conclusions were, of course, retarded!

Swiss alpine farmers figured this out centuries ago: where the plough fails, the cow doesn't. Buy your beef from the farmer down the road. xitter.cf/SamaHoole/status/21117…
Five series of Clarkson's Farm, and the same thing happened every year without anyone pointing it out. The wheat drowned in the wettest autumn on record. The sheep stood in the rain and lambed. The oilseed rape was eaten by flea beetle before it came up. The cows ate the grass that grew where the rape had failed. The potatoes rotted in a shed he could not sell them from. The pigs ate the potatoes. The wasabi, the chillies, the mushrooms in the bunker and the nettle soup made a few hundred pounds between them. The venison off the wood paid for the stalker and then some. The barley came in late, light and under the price it cost to grow, and the brewery took it at a discount. The beef off the same acres went out of the farm shop at a price people queued down the lane for. The arable half needed a two hundred thousand pound tractor, a man to drive it, a contractor to combine it, diesel, sprays, seed and a prayer to the sky. The grass half needed a fence and an animal. The one thing on that farm that failed every single year was the part a government leaflet tells you Britain should be growing more of. The one thing that never once failed was the part you are told the planet cannot afford. Five years of evidence, a thousand acres, the best advice in the county, and a camera crew to record it. The verdict was the same as every hill farmer's since the Domesday Book. On land like that, the animal is the only thing that works.

Les roadsters volants arrivent. Tant mieux.

Fifteen years on seal, walrus and bear, then thirty books and a quiz show win. Never underestimate what good fat and meat can fuel. 🥩 xitter.cf/SamaHoole/status/21115…
In 1926 a Danish explorer six feet seven inches tall was buried alive in an Arctic blizzard, chiselled his way out with a tool made from his own frozen excrement, crawled three hours home over the ice, and took his gangrenous toes off with a pair of pliers. He had lived for fifteen years on seal, walrus and bear, and he went on to be the villain in an Oscar-winning film and win a television quiz show. Peter Freuchen went to Greenland at twenty, built a trading post on a bay at the top of the world and called it Thule, after the medieval name for the edge of the map. The Inuit called him Big Peter. He married a girl from the settlement called Navarana, dressed in bearskin trousers, drove dogs, hunted walrus from a skin boat, and ate what everyone around him ate: meat and blubber, raw and frozen as often as cooked, and nothing green for years at a time. He wrote that the Inuit were the happiest people on earth and that he had never been fitter. Then the storm. Alone with a sled, he dug into the snow to wait it out, and the snow set to ice around him. Thirty hours. His beard froze to the wall and he tore it free. Nothing to dig with. So he made something, waited for it to harden, and cut his way to the sky. The toes went that night. The leg went later, and he walked on a peg for the rest of his life, which was a long one: he wrote thirty books, fought the Nazis in Denmark and escaped a death sentence, consulted for a President, starred in Hollywood, and in 1956 took the top prize on The $64,000 Question in front of the whole of America. The man who did all of that was built on the diet every nutrition leaflet calls a death sentence. He was cremated and his ashes scattered on a hill above Thule, where the walrus still haul out and nobody has ever grown a vegetable.

Things in software engineering get messy lately. Many of us are affected, including me. Some problems are old ones in a new form, some are genuinely new ones. I combine long IT experience with pragmatism and can help you separate the fear of being left behind from what matters.
